I actually made the loaf last night and let it chill until this morning. You don’t have to do it this way, but I was busy yesterday and didn’t feel like turning the oven on when I got home. But at 5:30 this morning, I was up and at it in the kitchen and couldn’t wait to try it.
When I first got it out of the oven, I was a little skeptical. It wasn’t as firm as I thought it would be and I was afraid it was going to fall apart when I cut it. And at first it did. So I put it into the refrigerator to chill for a couple of hours while I ran some errands and when I came back, I was pleased to find the loaf was perfectly set and didn’t crumble at all when sliced.
I coupled this Tofu Chèvre with whole wheat toast and some of my homemade Apple Pie Jam that I made last year for the holidays. But it’ll taste great on crackers, in a pita or even on it’s own with a dollop of jam. It was so good I can’t wait to finish this post so I can eat some more!
